
Coconut cake

Dessicated Coconut – 300 grams
Coconut Milk – 250ml
White Sugar – 150 grams
Brown Sugar – 100 grams
Plain Flour – 280 grams
Baking Powder – 1 tbsp
Eggs – 3
Butter – 240 grams
Vanilla Essence – 1 tbsp
A pinch of Salt
Powder the White and Brown Sugar, store separately
Add Eggs one by one, allowing each Egg to blend in well
Add 1/2 of the Flour and 1/2 of the Coconut Milk and mix well
Now add the remaining Flour and Coconut Milk, plus Baking Powder and Salt, mix well
It's now time to add Dessicated Coconut little by little and mix in well
Make sure that all edges are clear, by running through a spatula and give it a final mix with your hand
Transfer to a Buttered Cake tray and using a spatula spread it evenly
Bake in the centre of the oven for 50 minutes in a temperature setting of 170C or 325F at Mark 3
Prick the centre of the Coconut Cake with a wooden skewer, if it comes out dry it is done, if not leave for another 10 minutes
