Yellow pumpkins are a healthy vegetable and tasty too. Low in fat and cholesterol, pumpkin adds a lot of thereby making it a great food. Every household would have the usual pumpkin dishes but this variety adda out of pumpkin gives a different taste.
1. Ripe pumpkin 250 gm
2. Rice flour 2 glass
3. Jaggery 150 gm
4. Cut coconuts !/4 glass
5. Scraped coconut of half coconut
6. Cardamom 4 nos
7. Dry ginger 1 spoon
Cut pumpkins into small cubes, pressure cook and grind it in the mixie. Mix it well with the rice flour. Make a jaggery syrup and then filter it. Keep it on the stove and when it starts to boil add the scraped coconuts. When it starts condensing add cardamom powder and dry ginger powder and keep it aside. Mix all ingredients to the pumpkin mixture.
Take a plantain leaf and heat it lightly by keeping it on top of the stove so that it may not tear when folded. Make the dough into small balls and roll it evenly on the leaf and fold the leaf, Then steam it in the cooker. Mathanga Adda is ready to be served.
